Shahi Matar Paneer and Crispy Masala Pooris... :)


Shahi Matar Paneer:

Ingredients:
300 gm soft paneer
1.5 cup fresh matar
1 big onion chopped
4 medium size tomatoes chopped
1 inch slice of beetroot (Optional: but recommended: gives a very good color)
2 medium size green chilli chopped
1 tbsp oil
1 tbsp ghee
1/2 cup curd
12-15 soaked almonds
10 cashews
1 cup water
Spices: salt as per taste, cumin seeds, 1 tsp haldi, 1 tbsp coriander powder, 1 tsp red chilli powder
Tadka: 2 tbsp ghee, 1 tsp red chilli powder
Dry Methi leaves


Recipe:
Step 1: Boil matar and keep it aside.
Step 2: Add oil in kadhai, add cumin seeds, add onions and saute them for 3-4 minutes.
Step 3: Add tomato, beetroot, green chilll, turmeric, coriander, red chilli powder and saute for approx. 5 minutes. Let the mixture cool down.
Step 4: In a mixer jar: add this paste, soaked almonds, curd and grind to a smooth paste.
Step 5: In same kadhai, add 1 tbsp ghee, cashews and this paste. Cook on low flame for 2-3 minutes.
Step 6: Add boiled matar, paneer, 1 cup water (or as per required consistency) and salt as per taste.
Step 7: Cover kadhai with a lid and let it cook for 10 mins on lowest flame.
Step 8: Prepare Tadka: In a tadka paan, add ghee and red chilli.
Step 9: Switch off flame. Add tadka, and sprinkle dry methi leaves on top.
Simple and yet very tasty Shahi Matar Paneer is ready.

Tips & Points to Note:
1) You will see that I have added very less spices in sabji. Less spices brings real flavour of sabji. You can increase/decrease quantity of spices as per your taste.
2) Slice of Beetroot gives a really good color and flavour to sabji.
3) Curd gives that required sourness which gives really good taste.
4) Instead of adding more curd/milk, I have added almonds to gravy which makes gravy thick and also good taste.
5) Tadka gives a really good final touch to sabji.
6) Finally, just try out this recipe and thank me later.. :)
7) Boho Tip: To do some food photography, add elements like: Onion rings, Tadka spoon, whole chillis, whole tomatoes, couple of spoons with spices in it.



Cripsy Masala Pooris:

Ingredients:
1 cup whole wheat flour
1/2 cup Oats flour
1/2 cup Besan
Spices: Salt, 1/2 tsp Red chilli, 1/2 tsp ajwain, pinch of Haldi, 1 tbsp Kasoori methi

Recipe:
Step 1: Mix everything well, make a dough (bit hard than normal chapati dough) and keep it aside for 10 mins.
Step 2: Roll pooris and fry them.

Tips & Points to Note:
1) Instead of only adding wheat flour, try adding Oats, Besan and see difference in texture. Pooris will be more crispy.
2) Pinch of Haldi in dough gives a very good color.
